Weekly Menu - Easy Paleo Food



So, for those who are just finding my paleo menus - there is a reason that this blog is called Life with Autism and Bipolar. These disorders dictate how our life is organized.

Take last night for example. J (who has Asperger's and ADHD) walked from his school to my work. He got shredded coconut (a favorite snack) all over a table in my office. When I asked him to clean it up and take the coconut outside he started going into a full on meltdown mode. So, not happening at my work. After getting him under some sort of control we picked up S (who is also ASD with sever anxiety) from after school. She had not done her homework and it took me twenty minutes to get her seatbelt on and under control enough we could drive. Then we had to pull over and switch seats.

By the time we actually made it home we only had thirty minutes to eat dinner, sign planners, and get in our uniforms for Taekwondo. I had planned on having tuna with salad. A quick change of plans when I found out that J had the tuna during a midnight snack. We ate lunchmeat with veggies.

Our meals are not gourmet and fabulous. I am not a food blogger with beautiful pictures. I am a single mother of three special kids, trying to do the best that I can, and feed my children real food.

Typically my main cooking time is Sunday mornings where I make breakfast for the rest of the week. This is also where I will make any snacks or extras. For crockpot meals I prep the night before after the kids (hopefully) go to bed. Otherwise I make it as simple and low cook as possible. The more simple I make it the more my kids will eat it - they really do not like food to touch other food.

So here is our menu for the week.

Lunch 

Main - lunch meat or leftovers
Fruits - watermelon, apples, and grapes
Vegetables - cherry tomatoes, cucumbers

Thursday

Breakfast -  Butternut Squash Pancakes
Dinner - Eggs and Hash Browns

Friday

Breakfast - Zucchini Muffins
Dinner - Eat Out

Saturday

Breakfast - Lara Bar and Juice with Gelatin mixed in
Dinner - Lunch Meat and Veggies

Sunday

Breakfast - Butternut Squash Pancakes
Dinner - Cardoons and sausage

Monday

Breakfast - Smoothie
Dinner - Tomato Basil Crockpot Chicken

Tuesday

Breakfast - Chocolate Brownie Bites (cooking in mini muffin pan instead of waffle iron)
Dinner - Hard Boiled Eggs and Salad

Wednesday

Breakfast - Butternut Squash Pancakes
Dinner - Leftovers
