We have started Taekwondo. This has impacted us in several different ways. For one I am changing the way that I am getting food ready. All prep work is being done after the kids go to bed. I put it in the fridge and either throw it in the crockpot in the morning or use it when we get home. This means that all weekend meals will now have to be quick. Which if you take out cutting up the vegetables still leaves a whole lot of room for what to make.
We are also changing our grocery budget. It, like everything else, is being downsized. The truth is it will be very difficulty to pay for after school care and TKD - but both are necessary at this point. Add it co-pays and medication and we have more expenses then even most single parent households. The kids will each get $20 to spend on items not received from the CSA - rice cakes, GF/CF flaxseed muffins, fruit strips, ect. I am also cutting down the budget of the family food. To minimize there not being food at the end of the month we will have to shop twice a month. Costco trips will have to be funded by savings every three to six months.
Our biggest challenge is that J will not stop taking all the food in the house. This morning he had taken a bag of Honest Potatoes Chips and an entire pack of rice cakes into his room. Both of these food items were locked up and did not belong to him. He had just previously eaten breakfast where he had full access to fruits, vegetables, and waffles. I also buy him protein powder just for himself. I finally put my foot down and said enough is enough if you eat it all then everyone is out for the rest of the month. I did not do this prior because S still was not eating enough food and I had to have some of this stuff in the house. She is eating much better now, yet food is still her best reinforce to get her out of a meltdown.
