Kiwi Apple Fruit Leather or Popcicles


When we got a bunch of kiwi in our CSA kit I was excited to have a fruit other then oranges and apples. J was excited also, he loves kiwi and begged me to leave them alone so he could feast on them. I left some of them alone, the rest I turned into fruit strips and popsicles. He was good with this as well since he has gotten to continue eating the kiwi past that week.

I love fruit leather. I mix up fruit (hide in some vegetables), dehydrate it, and seal it. It is a great snack, works well for lunch boxes, and is perfect for food storage. We keep our fruit leather in a blue bin in our fridge to help increase the length it lasts.

Lately we have also started making popsicles. L has been feasting on these. I do not even need bribery, and she has no clue that vegetables are making their way into her body. Yes, I omit the truth - and I am very ok with that. Yesterday she would not even eat French Fries - the kind made with REAL potatoes! So, if I can sneak in some spinach then I will.

In your blender add:

2 apple
4 kiwis
1/2 - 1 lemon depending on taste
2 handfuls of spinach

blend and then poor on to your fruit strip liner - or place in popsicle container (we use ice cube trays).

This recipe makes two fruit strip trays, or two ice cube trays. You can always put it in half and half. I used a whole lemon and it was very tart - so if you are not a lemon fan then I would only use a 1/2 a lemon. I did put in the entire lemon - not just the juice.
