Paleo Roasted Radishes and Carrots


Do you have a picky eater in your family? If that picky eater is also on the autism spectrum getting them to eat can seem like the biggest obstical ever. L will starve herself rather then eat something too off the wall, which is why it takes so long to get her to accept new foods.

When I was younger I was the autistic picky eater. I once went a whole year where every meal I ate had chocolate in it. I had cereal with chocolate milk for breakfast, chocolate sandwiches for lunch, and brownies for dinner. Hum, no wonder why I was such a big kid. My mom finally curred me by fixing me lasagna with chocolate chips in it - tomatoes and chocolate - worse food combination ever. Yet forcing me to eat did not work either. My dad made me sit at the table until I finished my fish. Two days later he finally gave up. Yep I even slept at the table. To this day I will not touch fish.

I do not want my children to grow up like me. Even yesterday when packing my lunch I could not take the apple with the bump on it, S happily took it. This is one reasons why I am so big on eating healthy. I want my children to eat better then me. Which means I have to eat better as well. Which means I have to eat the vegetables that no one has ever tried.

Radishes may not evoke fear in you. But until yesterday I have never eaten one, yes never. So I wanted a recipe that would make them less scary. What I came up with was awesome.

Roasted Radishes and Carrots

Cut up radishes
Cut up equal amounts of carrots
Toss in olive oil, salt, pepper, and celantro (or other spice)

Put it in a pan (I used a square cake pan) at 450 for about 25 minutes. Start checking it at 20 minutes.

The carrots taste like carrot fries. They are less scary and complement the radishes. The radishes themselves (or at least the kind we had) have a texture like potatoes. The taste is not strong. It tastes even better when you dip them in Fanks hot sauce - but in our house it is our ketchup and dressing.

In all honest L had a rough day and would not even touch the carrots, S had one carrot and one radish. J finished off his plate, but asked not to take it for lunch. While it could not compare with chocolate, I liked it and would happily make it again - I also got all the left overs for lunch - score.
