Our First Paleo Pizza Attempt - Coconut Flour

So far I have been pretty successful at recreating some favorite foods that are no longer allowed in our household. While J and myself are at the point that we really could care less, S is at the point where she is all about eating good but misses her old food. L has been increasing the food she will eat, but it has increased since I have found ways to incorporate her favorites back into her diet. Like yesterday, when  I said I was making chicken and rice for dinner she made a disgusted face and informed me that I told her she did not have to eat rice again. Then I told her it was cauliflower rice. I had expected an even bigger reaction, instead I got an ok shrug and she went about her business. Will she eat it? We will see.

The one food that L has been bugging me for, and S has been echoing her, is pizza. There are hundreds of recipes for paleo pizza. Some are easy to discount - bacon as a pizza crust is too much and would not be accepted as pizza. However, others are interesting. There is a recipe that uses cauliflower as the crust, and another that uses carrots for the crust. I decided that I would go with something that seemed easy and familiar - coconut flour. Our first paleo pizza was good in the since that it was easy to make, I could totally whip this up on a school night.



It also cooked very well.


I toped it with some organic tomato paste, spices, half salami, and half pepperoni. There was no vegetables or cheese on it. The next pizza will be topped in fourths - so my pizza at least will be topped with veggies.




The overall verdict? The texture was good, but the taste was not. It kind of tasted like dirt. None of us liked it, which does not happen often. Next time we will go for a different crust.
