Paleo Chocolate Ice Cream - No Ice Cream Maker Required

One item on our list this week was ice cream. Back in the days where I was trying unsuccessfully to hold on to my sanity - the days where L was having two or three MAJOR panic attacks A DAY. I would do anything to make it through.

If you have special needs children you probably know what I am talking about. I have had this period with each one of my kids, and the periods pop up again and again to various degrees. It does represent itself differently with each child.

For L the anxiety of transitioning from one situation to another was impossible. It would take me an hour, minimum, to transition her from her summer camp to the car. This is with bribing her with her strong reinforcer of root beer. For weeks I bought her full sugar grossness. We even upgraded to the big gulp size. To get her out of the house in the morning I used ice cream. I tried to keep it in the house. S and L stopped stealing it, for the most part, because I let them it massive quantities of it as well. But they did not come close to the amounts that L was eating.

Did I mention this was one of our dark periods? L's anxiety disorder would have given me an anxiety disorder - if I had not genetically given it to her first.

L has been begging for some of her old food staples. When we found ketchup I was a hero. When I made ice cream I would let her eat I upgraded to super hero.

The recipe was super easy. You can find it here. We have yet to purchase an ice cream maker so I placed it in the freezer and stirred it every half hour for about four hours.

If you have a sweet tooth - or children - I would recommend adding the extra sweetener. We ended up using aguava. We also put in all three bananas - this is not something I would suggest. Instead of chocolate ice cream it was overpowered by the banana. Do not get me wrong - the kids loved it - but I would have liked the chocolate flavor more. Next time, which will be sometime this month, I will make it with only one banana.


You could also add chocolate chips to it!
