Emergency Preparedness - Beginning Food Storage

Lately I have been very concerned about two things.

One I need to cut down on our grocery bill. While I appreciate we had no food in our house prior to my new job, our spending has gotten a bit out of hand.

Two I want to make sure that we have food set aside for an emergency.

I have done one thing that has helped with both concerns - I bought a vacuum sealer.

I have been searching reviews for months, trying to decide on the best unit. I have been intimidated by the amount of people who seem to be unable to get the units to work, the different features available, and not paying more then I need to while getting everything that I will need long term.

I finally selected a unit, brought it home, and was amazed how easy it is!

Instead of purchasing a thing of organic celery and watching it go bad - because the only way we eat is if I cook with it - I used what I need for a recipe and stored the rest.

The process was super easy. I headed the celery up for five minutes in boiling water, then put it in freezing water. I did find that I needed to freeze the celery in order to get the bag to seal properly. I will continue to do this with all liquid foods.

I also cooked up the ten pounds of organic sweet potatoes that I got from Costco. I made four more batches of sweet potato fries and threw three in a vacuum bag in the freezer. I am hoping to have side dishes for weeknight dinners other then carrots or lettuce pulled out of a bag. 


For snacks I also made sweet potato chips and a berry fruit leather. I vacuumed an individual portion, labeled them, and threw them in a bin in my fridge. No more spoiled food. We are also slowly building up a backlog of food for food storage, we are spending less money on premade items, and I will have ingredients (or even frozen leftovers) on hand for the nights that I need them.
