Paleo Chocolate Pancakes!

As you may have already gathered my family loves pancakes. On special days, like Saturdays or holidays, or just because I feel like it and have time, I would get up and make the family pancakes. The kids would devour piles of them and I would stare in bafflement. Although, the kids do not eat quite as many pancakes when they are filled with things that are actually good for them, like protein and fiber, they still always go back for more.

To start off our game day I wanted to make a special breakfast. I decided to continue my search for a great pancake recipe. My one problem is that we were out of bananas, and nearly every paleo pancake recipe seemed to call for bananas. I remembered seeing pancake recipes in the Coconut Flour Recipes: 40 Scrumptious Recipes cookbook. I was delighted to see a double chocolate chip pancake recipe.

A small side note. As much as I talk about L being a picky eater, she has nothing on me as a child (mainly because I will not let her). I once went through a phase where everything I had in it had to have chocolate in it. It ended when my mom made chocolate lasagna. Tomatoes and chocolate do not mix!!! As a child we took a trip to Disneyland for Thanksgiving. During the trip I ordered chocolate chip pancakes - while everyone else had turkey. In my family I am always remembered by chocolate chip pancakes.

How could I turn down experimenting with a Paleo version?

I did make a few modifications. The recipe wanted only egg whites - I threw in the whole egg. I also have not been sold on the use of maple syrup, so I substituted in honey instead. We also did not have any chocolate chips in the house - two week break like chocolate would last that long! I made them without the chocolate chips. While I could see the chocolate chips making them even better, they worked well without them.

These pancakes were inhaled. Luckily I had doubled the recipe. We did have enough to reheat for breakfast the next day. L was not as thrilled about them reheated, but they were still a bit cold. Overall, a huge success and we will be eating these again - next time with chocolate chips!
