February 2014 Meal Plan


I have finally done it - I have finished our meal plan for February. The good news is that it was easier then last month. Next month I am hoping to add some variety. It is hard, because I like keeping in the meals that everyone will eat. Because of that we have a lot of repetition. Because I am a single, 40+ hour working mother to three special needs children I keep it simple.

Breakfast - for breakfast I make a dish on the weekend and we eat it all week long. I may throw in eggs on Sunday or Saturday.

Week One - Cinnamon Swirl Pancakes
Week Two - Breakfast Brownies
Week Three - Mini Blueberry Muffins
Week Four - Double Chocolate Chip Pancakes

Lunch

For lunch I either pack leftovers or the kids will keep lunchmeat. I keep nitrate free as natural as affordable lunch meat in our freezer from Costco. Then I know we have it available throughout the month when they need it. For L I have peperoni sticks. I will have to pick up Applegate pepperoni for her since I have not found a better substitute.

Hungarian Goulash
Grilled Chicken

Week Four

Eggs
Sausage (Italian Sausage from Costco)
Hamburgers
Leftovers
Eat Out
Texas Chili
Meatloaf muffins

Extra - This month both L and S have their birthday. Our extras are birthday themed.

Chocolate Ice Cream (we do not have an ice cream maker yet so this will be interesting)
Birthday Cupcakes
